Old Town Cellars — Mountain Town Red with Mulling Spices
As the cold weather creeps in and the holiday season nears, we love the thought of cozying up with a hot cup of mulled wine. For this bar we teamed up with our fellow Park City crafters at Old Town Cellars to create the perfect blend of mulling spices to use alongside their Mountain Town Red Wine Blend, giving all the warmth of this holiday season in every bite.
In making this bar, we started with the concept first: mulled wine. During the winter months a steaming mug of mulled wine can really hit the spot, especially if it’s poured from a thermos during a wintry outing. We worked closely with Old Town Cellars to find a way to impart the flavorful goodness of this winter beverage into our chocolate. To do this, they lent us one of their wine barrels and we filled it with nibs and a massive batch of mulled wine using their Mountain Town Red wine, oranges, cloves, star anise and cinnamon. Then, we let the nibs soak in this spiced concoction for a couple months, occasionally taking some nibs out to make a small test batch. When the flavor was just right, we emptied the whole barrel, dehydrated the nibs, and then made the full batch of chocolate. For us, perhaps the best part about this whole process were the aromas while making it.
This is a truly limited edition chocolate bar. Only three batches of the Mulled Wine chocolate were made, which should be enough spiced, chocolatey goodness to get us through the cold winter months.
